This Quick Fix Breakfast is simple and delicious. The recipe below is how we like to make it at PRN, but ingredients can be added, taken out or substituted for your tastes.
1/2 can coconut milk, or 1/2 large carton of coconut yogurt (if you don't like coconut then try greek yogurt or frozen yogurt with a tropical flavour such as mango or pineapple)
1/2 medium fresh pineapple, or 125mg pineapple chunks
1 medium banana
1 passion fruit - scoop the flesh out
The juice of 1/2 fresh lime
drizzle of honey
100ml mango juice/orange juice or pineapple juice - we like mango juice
Chop all the fruit and add to a blender. Add the coconut milk, mango juice, lime juice and honey. Blend together until smooth and serve in a tall glass.
